Method

Preparing the Steelhead Trout

Season the Trout

Pat the steelhead trout fillets dry with paper towels. Drizzle with olive oil, then season both sides with salt and black pepper.

Sear the Trout

In a large skillet over medium-high heat, add the seasoned trout fillets. Cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Cooking the Romano Beans

Prepare the Beans

Trim the ends of the romano beans and rinse them under cold water.

Cook the Beans

In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the romano beans and cook for about 5-7 minutes, stirring occasionally, until they are tender. Season with salt and black pepper to taste.

Making the Persillade

Combine Ingredients

In a small bowl, combine the finely chopped parsley, minced garlic, lemon juice, and salt. Mix well until all ingredients are blended.

Preparing the Sauce Almondine

Toast the Almonds

In a small saucepan over medium heat, melt the butter. Once melted, add the sliced almonds and cook, stirring constantly, until they are golden brown, about 3-4 minutes.

Finish the Sauce

Remove the saucepan from heat and stir in the lemon juice and salt to taste. Set aside.
