Preparation
Prepare the Mojo Pork
If you don't have Mojo pork ready, marinate pork in a mixture of garlic, sour orange juice, olive oil, and spices for at least 2 hours, preferably overnight. Then slow-cook or roast until tender, about 4-6 hours. Shred the pork and set aside.
Assemble the Sandwich
Lay out one slice of Cuban bread on a clean surface. Spread a tablespoon of Dijon mustard evenly on the slice. Layer with the sliced ham, followed by the mojo pork, Swiss cheese, and pickle slices. Top with the second slice of Cuban bread.
Cooking
Grill the Sandwich
Preheat a panini press or a skillet over medium heat. If using a skillet, you may need to weigh down the sandwich with a heavy pan. Place the assembled sandwich on the press or skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
Remove the sandwich from the heat and allow it to cool for a minute. Cut the sandwich diagonally and serve hot, optionally with extra pickles on the side.
