Prepare the Filling

In a large skillet, heat a small amount of oil over medium heat. Add the sliced mushrooms and sauté for about 3-4 minutes until they are tender.

Add Cabbage and Pork

Add the shredded cabbage and Korean BBQ pork to the skillet. Stir everything together and cook for another 5 minutes until the cabbage is wilted and everything is heated through.

Assembling the Quesadillas

Prepare the Tortillas

Take one flour tortilla and place 1/4 cup of the filling mixture on one half of the tortilla. Sprinkle 1/4 cup of shredded cheddar cheese over the filling.

Fold and Cook

Fold the tortilla in half over the filling. Heat a non-stick skillet over medium heat and place the folded quesadilla in the skillet. Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese has melted.

Repeat

Repeat the process with the remaining tortillas and filling.

Serving

Serve the Quesadillas

Cut the quesadillas into wedges and serve warm with a side of gochujang sauce and sour cream for dipping.
