Make strawberry-basil shrub
Hull and roughly chop the strawberries. Combine strawberries, granulated sugar, and 2 tbs water in a bowl. Muddle or gently mash until the sugar begins to draw juices from the fruit (about 5 minutes). Add packed basil leaves, gently muddle once or twice to bruise the herbs, then cover and refrigerate for 1 hour to macerate.
Strain the macerated mixture through a fine sieve or cheesecloth into a jar, pressing solids to extract as much liquid as possible. Discard solids or reserve for another use.
Stir the extracted fruit syrup with apple cider vinegar until combined. Taste and adjust: aim for a bright sweet-tart balance. Chill. Yield should be roughly 3/4 to 1 oz per 2 cups of starting fruit — use 1/2 oz shrub per cocktail.
Make honey syrup
Warm 1 tablespoon water and dissolve 2 tablespoons honey into it to make a pourable honey syrup. Cool to room temperature before using. (If using straight honey, be sure it mixes well into the cocktail.)
Citrus-Basil Foam (Garnish)
If using aquafaba, measure 1 tbsp aquafaba; if using egg white, separate one egg and reserve white. Combine the egg white or aquafaba, 1 tsp cold water, 1/4 oz lemon juice, 1/2 tsp simple syrup, 1 tsp finely minced basil, and 1/4 tsp lemon zest in a small container suitable for shaking or blending.
Dry-shake vigorously (no ice) for 20–30 seconds to build foam. If you have an immersion blender, blend for 10–15 seconds to create a stable microfoam. For a richer foam, add one small ice cube, shake again briefly, then strain out melted water before final use.
Chill the foam in the refrigerator while you prepare the cocktail; re-whip briefly right before finishing if it has settled.
Cocktail Assembly
Add 2 oz blanc vermouth, 3/4 oz fresh lemon juice, 1/2 oz strawberry-basil shrub, and 1/4 oz elderflower liqueur or cordial to a cocktail shaker.
Add the honey syrup you made (about 1/4 oz — if you prefer sweeter, add up to 1/2 oz). Add ice to the shaker (about 1 cup) and shake vigorously for 12–15 seconds until well chilled.
Finish & Garnish
Gently spoon or pour the chilled citrus-basil foam on top of the cocktail to form a 1/4–1/2 inch layer. If needed, use the back of a spoon to help the foam settle smoothly.
Garnish with a thin strawberry slice on the rim, a small basil sprig laid across the foam, and optionally an edible flower. Express a little lemon zest over the surface for aroma.
Serve immediately.
