Preheat and prepare

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. Place a metal or glass bowl and the stick of cold butter in the freezer for 5–10 minutes while you measure dry ingredients — this helps keep the butter very cold.

Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour (2.5 cups), baking powder (1 tbsp), salt (1/2 tsp), and sugar (1 tsp) until evenly combined.

Cut in the butter

Using a box grater, pastry cutter, two knives, or your fingertips, grate or cut the 6 tbsp cold unsalted butter into the dry mixture until it resembles coarse crumbs with some pea-size pieces of butter remaining. Work quickly to keep the butter cold.

Add milk and form dough

Pour 1 cup cold whole milk into the flour-butter mixture. Use a fork or rubber spatula to stir until the dough just comes together and holds when pinched; it will be slightly shaggy and sticky. Do not overmix.

Turn out and fold

Turn the dough onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough over onto itself 2 times (one quick letter fold), press it lightly to 1-inch thickness again. This creates layers for flakiness. If dough seems too sticky, dust lightly with flour—avoid adding more than 1–2 tbsp.

Cut biscuits

Using a 2.5-inch round biscuit cutter or a sharp knife, cut out biscuits straight down without twisting. Press scraps together gently, pat to 1-inch thickness, and cut additional biscuits. You should get about 8–10 biscuits depending on cutter size and trimming.

Arrange and brush

Place the biscuits on the prepared baking sheet about 1 inch apart for crisp edges or touching for softer sides. Brush the tops with 2 tbsp heavy cream for color and shine. Optionally sprinkle a tiny pinch of salt on top for contrast.

Bake

Bake in the preheated 425°F (220°C) oven for 12–15 minutes, rotating the pan halfway through, until the tops are deep golden and the bottoms are cooked through. A tester inserted should come out clean or with a few moist crumbs.

Cool briefly

Remove biscuits from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack or serving plate. Serve warm for best texture.

Honey Butter

While biscuits bake, make the honey butter. In a small bowl, beat 4 tbsp softened unsalted butter with 3 tbsp honey and 1/8 tsp fine salt until smooth and slightly fluffy. Taste and adjust salt or honey if desired. Transfer to a small serving dish or use immediately.

To Serve

Split biscuits open and spread a small amount of softened butter if using, then drizzle or brush with the honey butter. For extra sweetness, warm 1/4 cup extra honey slightly (10–15 seconds in microwave) and serve on the side for drizzling. Serve immediately while biscuits are warm and flaky.
