Method

Prepare seafood
Rinse shrimp, calamari, and scallops under cold water and pat dry with paper towels. If using clams or mussels, scrub shells and discard any that remain open after a light tap.
Sauce & Aromatics
Add the finely chopped yellow onion and shallot and cook, stirring occasionally, until translucent and softened, about 4–5 minutes.
Add the minced garlic and 1 tsp crushed red pepper flakes and cook for 30–45 seconds until fragrant, taking care not to burn the garlic.
Liquids & Tomatoes
Pour in 3 tbs dry white wine and use a wooden spoon to scrape up any browned bits from the pan. Let wine reduce by half, about 1–2 minutes.
Stir in the 14 oz crushed tomatoes (or passata) and 1 cup stock. Bring the mixture to a gentle simmer, then reduce heat to medium-low and simmer for 6–8 minutes to meld flavors and slightly thicken the sauce.
Seafood Cooking
Add the shrimp, scallops, and calamari to the sauce in a single layer. Season with 1 tsp kosher salt and 1 tsp freshly ground black pepper. Cook, stirring gently, until shrimp are pink and opaque and scallops and calamari are just cooked through, about 3–4 minutes (shrimp and scallops will be firm; calamari should be tender).
Finish & Serve
Add 2 tbs fresh lemon juice and 1 cup chopped fresh parsley to the pan. Stir to combine.
Taste and adjust seasoning with additional salt, pepper, or red pepper flakes to taste. Stir in optional 2 tbs chiffonaded basil if using and 1 tbs grated Parmesan, if desired.
