Heat and steep

Bring 4 cups of water to a near boil (just off boiling, about 205°F / 96°C). Remove from heat, add 4 black tea bags, and steep for 4–6 minutes depending on desired strength. Avoid over-steeping to prevent bitterness.

Remove tea bags, gently pressing them against the side of the pot with a spoon to extract flavor, then discard the bags. Let the brewed tea cool slightly while you make the peach syrup (about 10 minutes).

Prepare peaches

While the tea steeps, peel and slice 2 ripe peaches. If peaches are very ripe and soft, simply halve and scoop out flesh; otherwise blanch for 30–60 seconds in boiling water, shock in ice water, then peel.

Cook syrup

In a small saucepan, combine 1 cup sugar and 1 cup water. Add the sliced peaches and bring to a gentle simmer over medium heat. Cook for 8–10 minutes, mashing a few slices with the back of a spoon to release juices and create a thicker syrup.

Finish syrup

Remove from heat, stir in 1 tablespoon lemon juice to brighten flavor, and let the mixture cool for 10 minutes. Strain the mixture through a fine-mesh sieve into a bowl or jar, pressing solids to extract liquid. Reserve the strained syrup and set aside any soft peach pieces for garnish or blending into the tea if desired. Chill the syrup if not using immediately.

Combine and dilute

In a large pitcher, combine the slightly cooled brewed tea and 4 cups cold water. Add 1 to 1 1/2 cups of the prepared peach syrup to taste (start with 1 cup if you prefer less sweet, add up to 1.5 cups for sweeter drink). Stir well to combine.

Chill

Refrigerate the combined tea and syrup for at least 30 minutes to fully cool and allow flavors to meld. Alternatively, serve immediately over ice for a quick drink (the ice will dilute slightly).

Serve

Fill glasses with ice (about 1/2 cup ice per glass). Pour the peach iced tea over the ice. Garnish each glass with a fresh peach slice and 2 mint leaves if using. Taste and adjust sweetness by adding more syrup or a splash of lemon juice if desired.

Storage: Keep leftover tea and syrup refrigerated in separate airtight containers for up to 3–4 days. Stir before serving. If tea becomes too strong after refrigeration, dilute with a little cold water.
