Dry shake
Separate one fresh large egg and add the egg white (discard or reserve the yolk for another use) to a cocktail shaker. Add 2 oz pisco, 0.75 oz fresh lime juice and 0.5 oz simple syrup. Do not add ice yet. Seal the shaker and shake vigorously for 15–20 seconds to emulsify and create foam.
Wet shake
Open the shaker and add about 1 cup of ice. Seal and shake hard for 10–15 seconds until the shaker is very cold to the touch and you hear the ice fully crushed.
Double strain and garnish
If you have a fine strainer, double-strain the mixture into a chilled coupe or rocks glass to remove any tiny ice shards. Allow the foam to settle on top. Add 2 dashes of Angostura bitters on the foam and, using a toothpick or straw, gently drag the bitters into a small decorative pattern if desired.
Optional/Tools
Chill the coupe or rocks glass in the freezer for 5–10 minutes before preparing the cocktail for best presentation. Use a jigger to measure spirits and juices accurately. Clean and dry tools after use.
