Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

In a medium bowl whisk together the all-purpose flour, baking soda, and sea salt until evenly combined. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer), beat the room-temperature unsalted butter, granulated sugar, and light brown sugar on medium speed until light and fluffy, about 2–3 minutes.

Beat in the egg and 1 teaspoon vanilla extract until combined, scraping down the bowl as needed.

Add the creamy peanut butter and mix on low speed until fully incorporated and the dough is smooth, about 30–45 seconds.

With the mixer on low speed, gradually add the flour mixture until just combined. Do not overmix.

Scoop tablespoon-sized portions of dough (about 1 tablespoon each) and roll into balls. Place them 2 inches apart on the prepared baking sheets. Flatten each ball slightly with a fork, making a crisscross pattern if desired, or leave rounded if you prefer a mound for the sheep topping.

Bake in the preheated oven for 9–11 minutes, until the edges are set and the centers are just slightly soft. Rotate pans halfway through for even baking.

Remove cookies from oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before filling and decorating.

Prepare cream cheese filling

In a medium bowl, beat the softened cream cheese and 2 tablespoons softened butter until smooth and creamy. Add the powdered sugar, 1/2 teaspoon vanilla extract, and honey; beat on low until combined and then medium speed until smooth. Taste and adjust sweetness if desired. This filling should be pipeable but stable.

Toast coconut (optional)

If you prefer a slightly toasted coconut flavor, spread the shredded coconut on a small baking sheet and toast in the oven at 325°F (160°C) for 4–6 minutes, stirring once, until lightly golden. Watch closely to avoid burning. Let cool.

Melt chocolate for accents

Place the chopped dark chocolate and 1 teaspoon vegetable oil in a small microwave-safe bowl. Microwave in 15–20 second bursts, stirring between bursts, until smooth. Alternatively, melt over a double boiler. Use a small piping bag or a zip-top bag with a small corner snipped to drizzle, and reserve a few chocolate chips for eyes if desired.

Pipe filling

Transfer the cream cheese filling to a medium piping bag fitted with a medium round tip (or use a zip-top bag with the corner snipped). On each cooled peanut butter cookie, pipe a rounded mound in the center approximately 1 to 1 1/2 tablespoons in size to form the sheep's face base.

Create sheep wool

Working one cookie at a time, press shredded coconut into the cream cheese mound so the coconut adheres and covers the filling completely, forming a fluffy "wool" coat. If you toasted coconut, use the toasted pieces to add color variation.

Add face features

Using the melted dark chocolate, pipe a small oval or circle onto the top-front of the coconut mound to create the sheep dog’s face, or leave a small area free of coconut for the face and pipe chocolate directly onto the cookie or filling. Place two mini chocolate chips for eyes and one for the nose (use a small dab of melted chocolate as glue if needed).

Optional finishing touches

If desired, lightly sprinkle a bit of coarse sugar around the edge of the cookie for sparkle, or drizzle a small amount of remaining melted chocolate over the wool for contrast. Clean up any excess.

Chill briefly and serve

Place the assembled cookies on a tray and refrigerate for 15–20 minutes to set the filling and chocolate accents. Serve at room temperature. Store leftovers in an airtight container in the refrigerator for up to 4 days; bring to room temperature before serving for best texture.
