Method

Preparation

1

Mix the Crab Cake Ingredients

In a large mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, breadcrumbs, and chopped green onions. Gently fold the ingredients together until well combined, being careful not to break up the crab meat too much.

2

Chill the Mixture

Cover the mixing bowl with plastic wrap and refrigerate the mixture for at least 30 minutes. This helps the flavors meld together and makes it easier to form the cakes.

Cooking

3

Form the Crab Cakes

After chilling, remove the mixture from the refrigerator. Using your hands, form the mixture into patties, about 3 inches in diameter and 1 inch thick. You should get around 8 patties.

4

Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until shimmering, approximately 5 minutes.

5

Cook the Crab Cakes

Carefully place the crab cakes in the hot oil, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain excess oil.

6

Serve

Serve the crab cakes warm with lemon wedges on the side for squeezing over the top.
