Prepare the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter

Add the cold unsalted butter, cut into small cubes, into the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Stir in the buttermilk and honey until just combined. Be careful not to overmix.

Turn the dough out onto a lightly floured surface and knead gently. Pat into a 1-inch thick rectangle. Cut into rounds using a biscuit cutter. Place on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
