Method
Black Garlic Crumble
Prepare black garlic purée
Place peeled black garlic cloves in a small food processor or blender. Pulse until a coarse paste forms. If needed, add 1/2 teaspoon water to help the purée come together. Scrape down sides and set aside.
Make crumb base
Preheat oven to 350°F (175°C). In a mixing bowl combine flour, panko breadcrumbs, grated Parmesan, lemon zest, sea salt, and black pepper. Add the black garlic purée and diced cold butter. Using fingertips or a pastry cutter, rub the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces.
Bake crumble
Spread the crumb mixture evenly on a small baking sheet lined with parchment. Bake for 10–12 minutes, stirring once at the 6-minute mark to encourage even browning. Remove when crumbs are golden and aromatic. Let cool completely on the sheet; the crumbs will crisp up as they cool.
Assembly & Garnish
Season crème fraîche
In a small bowl, stir together the crème fraîche, lemon juice, and half of the snipped chives. Season lightly with a pinch of flaky sea salt and a grind of black pepper. Keep chilled until ready to plate.
Plate base
For each serving (recipe yields 4 small canapé portions or 2 larger spoons): place 1–2 tablespoons of the seasoned crème fraîche in the center of the plate or on tasting spoons. Smooth or leave slightly peaked.
Add trout roe and crumble
Spoon approximately 3/4 tablespoon of trout roe atop each crème fraîche portion (adjust per serving size). Sprinkle a generous 1–2 tablespoons of the black garlic crumble around and lightly over the roe—aim for a balance so the roe remains visible and not completely buried.
Garnish and finish
Drizzle each assembled portion with a light touch (about 1/4 teaspoon) of extra-virgin olive oil. Scatter remaining snipped chives and microgreens as desired. Finish with a small pinch of flaky sea salt over the crumble (do not over-salt the roe). Serve immediately at cool room temperature so the crumble stays crisp and the roe is chilled.
Serving suggestions & notes
This preparation is best served fresh. If prepping ahead, bake the crumble and keep in an airtight container at room temperature for up to 24 hours; assemble within 30 minutes of serving. Use chilled roe straight from refrigerator. For a more pronounced umami, fold an additional half-teaspoon of black garlic purée into the crème fraîche (reduce salt accordingly).
