Method

Preparation

1

Prepare the Apricot Mixture

In a saucepan, combine the apricots, sugar, and milk. Cook over medium heat until the apricots are soft and the mixture is thickened, about 15 minutes. Remove from heat and let cool slightly.

2

Blend and Strain

Blend the apricot mixture until smooth. Strain through a fine sieve to remove any skins or lumps, then return to the saucepan.

3

Add Remaining Ingredients

Stir in the softened butter, egg yolks, vanilla extract, flour, and a pinch of salt into the apricot puree. Mix until well combined.

4

Whip the Egg Whites

In a separate bowl, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the apricot mixture, being careful not to deflate them.

5

Prepare the Baking Dish

Preheat your oven to 375°F (190°C). Grease ramekins or a soufflé dish with butter and dust with sugar to prevent sticking.

6

Bake the Soufflé

Pour the soufflé mixture into the prepared ramekins and place them on a baking sheet. Bake for 25-30 minutes, or until puffed and golden on top.

7

Serve

Remove from the oven and serve immediately, as soufflés can deflate quickly.
