Roast the Potatoes

Preheat the oven to 400°F (200°C). Cut the potatoes into bite-sized pieces, toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until golden and tender.

Prepare the Haricot Vert

Trim the ends of the haricot vert and blanch them in boiling water for 3-4 minutes until bright green. Drain and immediately place in ice water to stop the cooking process. Drain again and set aside.

Cook the Ahi Tuna

Coat the ahi tuna steaks with sesame seeds on both sides. Heat the remaining olive oil in a skillet over medium-high heat. Sear the tuna for about 2-3 minutes on each side for rare. Remove from the skillet and let rest before slicing.

Assemble the Salad

In a large bowl, combine the mixed greens, roasted potatoes, haricot vert, halved cherry tomatoes, capers, chopped red onion, and niçoise olives. Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine.

Serve

Plate the salad mixture and top with sliced ahi tuna. Serve immediately.
