Place a rocks glass in the freezer or fill with ice to chill while you prepare the cocktail.

In a mixing glass, add 0.25 oz simple syrup and 2 dashes Peychaud's bitters.

Add 2 oz Elijah Craig bourbon to the mixing glass.

Add plenty of ice to the mixing glass and stir gently for 20–30 seconds (about 15–20 full turns) until the mixture is well chilled and slightly diluted.

Discard ice from the chilled rocks glass and add a large clear ice cube.

Strain the stirred cocktail into the rocks glass over the large ice cube.

Garnish

Express the oils from an orange peel over the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a firm squeeze (or fold). Run the peel around the glass rim and drop it into the drink. Add one Amarena cherry on a pick or directly into the glass.

Optional — Make it smoky

Using smoky Scotch

If using a few drops of smoky Islay Scotch, add 0.25 oz to the mixing glass with the bourbon before stirring. Reduce simple syrup slightly if desired to keep balance.

Using wood smoke

Prepare the finished cocktail in the rocks glass with ice. Place the Amarena cherry and orange peel in the glass. Cover the glass with a smoking cloche or inverted mixing tin, ignite a small piece of cherry wood or use a torch to create smoke, capture the smoke in the cloche for 20–30 seconds, then remove the cover and serve immediately. Warn guests about hot equipment and residual smoke.
