Honey-citrus simple syrup (make ahead)
Combine and heat
In a small saucepan combine 0.5 cup honey and 0.5 cup water. Add the orange zest (about 1 tablespoon) and lemon zest (about 1 teaspoon).
Cool and strain
Remove from heat and let the syrup cool to room temperature (15–20 minutes). Strain through a fine mesh sieve to remove zest. Transfer syrup to a clean jar and refrigerate. Keeps up to 2 weeks.
Cocktail
Chill glass
If desired, place a rocks glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to chill it, then discard the water before serving.
Measure and add to shaker
Add 2 oz Bulleit Rye, 0.75 oz honey-citrus simple syrup, 0.75 oz fresh lemon juice, and 2 dashes orange bitters to a cocktail shaker.
Add ice and shake
Fill the shaker with ice (enough to nearly fill). Secure the lid and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted on the outside. The vigorous shake helps integrate the viscous honey syrup.
Prepare serving glass
Add a large ice cube (or fresh ice) to the chilled rocks glass.
Double strain and pour
Using a Hawthorne strainer and, if available, a fine mesh strainer, double-strain the cocktail into the prepared rocks glass over the large ice cube to remove any small ice shards and citrus pulp.
