Preheat and prepare garlic
Preheat oven to 400°F (200°C). Slice the top off each garlic head to expose the cloves. Place heads on a small sheet of foil, drizzle with 1 tablespoon olive oil, and sprinkle 1/4 teaspoon salt over them. Wrap the foil to form a loose pouch.
Roast
Roast for 35–45 minutes, until cloves are soft and golden. Let cool enough to handle, then squeeze out and measure approximately 8 cloves of roasted garlic for the hummus. Reserve any extra for another use.
Hummus
Prepare chickpeas
Drain the canned chickpeas, reserving 2 tablespoons of aquafaba (liquid). Optionally, for an ultra-smooth hummus, remove the skins by pinching each chickpea between your fingers; this step takes extra time but yields silkier texture.
Combine base ingredients
In a food processor, add 2 cups drained chickpeas, 8 roasted garlic cloves, 1 cup tahini, 4 tablespoons fresh lemon juice, 3 tablespoons extra-virgin olive oil, 1 teaspoon ground cumin, 1.5 teaspoons kosher salt, and 1/2 teaspoon black pepper.
Process
Pulse to combine, then run the processor continuously while drizzling in the 2 tablespoons reserved aquafaba. Stop and scrape down the sides as needed. If the mixture is too thick or grainy, add up to 2 tablespoons ice water, 1 tablespoon at a time, and continue processing until smooth and creamy (about 2–4 minutes total processing time). Taste and adjust seasoning with more salt, lemon, or cumin as desired.
Finish
Transfer hummus to a shallow serving bowl, using a spoon to create a shallow well in the center for oil and garnish.
Topping & Garnish
Drizzle 1 tablespoon extra-virgin olive oil over the hummus. Sprinkle 1/2 teaspoon smoked or sweet paprika evenly across the top. Crumble 1/2 cup feta over the hummus, then scatter 2 tablespoons chopped fresh parsley. Optionally, add a few whole roasted garlic cloves on top for presentation.
