Rinse nopales under cold water; trim both ends and remove any spines. Slice into strips about 1/4 inch thick.

In a large bowl, whisk together olive oil, lime juice, minced garlic, salt, cumin, and paprika.

Toss nopales with marinade

Add sliced nopales and chopped onion to the bowl; toss until evenly coated. Let marinate 10–15 minutes to reduce slime and enhance flavor.

Preheat a grill or grill pan to medium-high heat.

Grill nopales in a single layer, turning once, until vibrant green and edges are slightly charred, about 4–6 minutes per side.
