Method

APPETIZERS

1

Prepare Caesar dressing

In a medium bowl, whisk together pasteurized egg yolks, minced anchovy fillets, minced garlic, lemon juice, Dijon mustard, and Worcestershire sauce until smooth.

2

Emulsify dressing

Slowly whisk in extra-virgin olive oil in a thin stream to emulsify. Continue whisking until dressing is thick and glossy.

3

Finish dressing

Whisk in finely grated Parmesan, salt, and black pepper. Taste and adjust acidity or salt as needed.

4

Prepare lettuce

Rinse romaine thoroughly, dry well, and tear into bite-sized pieces.

5

Toss lettuce with dressing

In a large bowl, add about three-quarters of the dressing to the chopped romaine and toss until leaves are lightly coated. Add more dressing if needed; you want glossy leaves, not soggy.

6

Integrate croutons and shaved Parmesan

Add croutons and shaved Parmesan to the dressed lettuce and toss gently to distribute evenly.

7

Plate and finish

Divide the salad among serving plates. If desired, finish with an extra shower of shaved Parmesan and freshly ground pepper. Serve immediately.
