Ceviche Preparation

Prepare the shrimp

In a bowl, combine shrimp with lime juice. Ensure the shrimp is fully submerged. Cover and refrigerate for 30 minutes until shrimp turns opaque.

Mix the ingredients

After the shrimp is marinated, drain excess lime juice. Add diced cucumber, chopped red onion, chopped cilantro, and diced tomatoes to the shrimp. Mix well.

Season the ceviche

Add salt and black pepper to the shrimp mixture. Stir to combine and adjust seasoning to taste. Serve chilled.

Prepare the tortillas

Cut each corn tortilla into sixths to create chip-sized pieces.

Fry the chips

In a large pot, heat vegetable oil over medium-high heat. Once the oil is hot, add the tortilla pieces in batches, frying until golden brown and crispy, about 2-3 minutes. Use a slotted spoon to remove the chips and place them on paper towels to drain excess oil.

Season the chips

Immediately sprinkle hot chips with salt to taste while they are still warm.
