Cooking the Pasta

Boil Water

In a large pot, bring approximately 4 quarts of water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

Cook Pasta

Add the capellini pasta to the boiling water and cook for 2-4 minutes, stirring occasionally, until al dente. Be careful not to overcook, as capellini cooks quickly.

Drain Pasta

Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta in a colander. Set aside.

Making the Sauce

Heat Oil

In a large skillet over medium heat, add 3 tablespoons of olive oil and heat until shimmering.

Sauté Garlic

Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

Add Tomatoes

Stir in the halved cherry tomatoes and cook for about 5-7 minutes, until they start to soften and release their juices.

Combine Pasta and Sauce

Add the drained capellini pasta to the skillet with the tomatoes. Toss everything together, adding reserved pasta water a little at a time to help create a sauce.

Season

Add the chopped basil, 1 teaspoon of salt, and 1 teaspoon of freshly ground black pepper. Toss well to combine.

Serve

Remove from heat and serve immediately, garnishing with grated Parmesan cheese.
