Preheat your oven to 400°F (200°C).
In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, minced garlic, egg, chopped parsley, salt, and black pepper. Mix until just combined.
Form the mixture into meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
Drizzle olive oil over the meatballs.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and browned.
Marinara Sauce
In a medium saucepan over medium heat, add 1 tablespoon of olive oil.
Add the chopped onion and sauté for 3-4 minutes until softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir to combine.
Simmer the sauce for 15-20 minutes, stirring occasionally, until slightly thickened.
Stir in the chopped fresh basil just before serving.
Assembling the Boxed Lunch
Slice sub rolls or sandwich bread in half.
Place a few lettuce leaves on the bottom half of each roll.
Add a few slices of tomatoes and mozzarella cheese on top of the lettuce.
Place 2-3 meatballs on top of the cheese and drizzle with marinara sauce.
Top with pickles if desired and cover with the top half of the roll.
Wrap each boxed lunch in parchment paper or place in a lunch container.
