Chocolate Budino

Method

Preparation

1

Make the Chocolate Budino

In a saucepan, combine chopped chocolate, sugar, cocoa powder, and sea salt. Heat over medium heat until melted and smooth.

2

Add Milk and Cream

Stir in the milk and heavy cream, continuing to heat until just simmering.

3

Whisk Eggs

In a separate bowl, whisk the eggs and vanilla extract together until combined.

4

Temper the Eggs

Slowly add the hot chocolate mixture to the eggs, whisking constantly to prevent curdling.

5

Bake the Budino

Pour the mixture into ramekins and place them in a baking dish filled with hot water. Bake at 325°F (160°C) for about 30-35 minutes or until just set.

6

Cool and Chill

Remove from the oven and let cool before refrigerating for at least 4 hours.

7

Serve

To serve, top the chilled budino with crushed pizzelle cookies, toffee bits, a scoop of coffee gelato, and a sprinkle of sea salt.
