Prepare the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

Add Garlic

Stir in the minced garlic and cook for an additional 2 minutes until fragrant.

Deglaze the Pot

Pour in the white wine and scrape the bottom of the pot to release any browned bits. Allow the wine to reduce by half.

Simmer the Soup

Add the beef broth, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce to a simmer for about 30 minutes. Remove bay leaves before serving.

Prepare the Bread and Cheese

While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast them in the oven until golden brown, about 10 minutes. Remove from oven and set aside.

Assemble the Gratinée

Ladle the soup into oven-safe bowls. Top each bowl with a few toasted baguette slices and sprinkle generously with grated Gruyère cheese.

Broil the Cheese

Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes. Watch carefully to avoid burning.

Remove from the oven and let cool slightly. Serve hot and enjoy!
