Sweetbreads & Marinade
Trim and soak
Remove any excess connective tissue and membrane from the sweetbreads. If whole and large, halve or quarter to create uniform pieces about 1–1½ inches thick. Place sweetbreads in a bowl and cover with 2 cups whole milk. Stir in 2 tablespoons white wine vinegar. Refrigerate and soak for 2 hours (this helps remove blood and gently tenderizes).
Gentle poach
Bring a pot of water to a gentle simmer (not a rolling boil). Add a pinch of salt and the drained sweetbreads. Poach gently for 6–8 minutes until they feel slightly firm but still tender. Remove with a slotted spoon and immediately transfer to an ice bath to stop cooking. Drain and pat dry. If necessary, press gently between paper towels to remove excess moisture.
Coating & Frying
Prepare coating station
Season the flour with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Place flour in a shallow dish. In a second dish whisk the egg with 1 tablespoon heavy cream until smooth. Place breadcrumbs in a third dish.
Dredge sweetbreads
Lightly dredge each poached sweetbread piece in seasoned flour, shaking off excess. Dip into the egg-cream wash, letting excess drip off, then press into breadcrumbs to coat evenly. Place on a tray and rest 10 minutes to help coating adhere.
Fry until golden
Heat 1 cup neutral oil in a large skillet over medium-high heat until shimmering and a small breadcrumb sizzles (about 350°F / 175°C). Add 2 tablespoons unsalted butter to the oil. Fry sweetbreads in batches, avoiding overcrowding, 2–3 minutes per side until golden brown and crisp. Transfer to a wire rack set over a sheet pan and season immediately with a pinch of salt. Keep warm in a low oven (200°F / 95°C) while finishing remaining pieces.
Caper Sauce & Accents
Sauté aromatics
Reduce heat to medium. In a separate sauté pan melt 1 tablespoon unsalted butter over medium heat. Add the minced shallot and cook, stirring, until soft and translucent, about 2–3 minutes. Add the minced garlic and cook 30 seconds until fragrant.
Deglaze and simmer
Add 1 tablespoon dry white wine to deglaze the pan, scraping any browned bits. Let the wine reduce by half (about 1–2 minutes). Add 1 tablespoon fresh lemon juice and the rinsed capers. Stir to combine.
Finish the sauce
Lower heat to medium-low and stir in 2 tablespoons heavy cream. Simmer gently 1 minute to warm and slightly thicken. Remove from heat and whisk in the 2 tablespoons cold butter cubes one at a time to create a glossy emulsion (monter au beurre). Taste and season with salt and pepper as needed. Stir in chopped parsley and chives.
Optional quick pan sauce with fond from frying
If you prefer extra richness, after frying the last batch, pour off excess oil leaving about 1 tablespoon of fond and browned bits in the frying skillet. Over medium heat, add the shallot and garlic and follow the same deglaze and finish steps above, combining the resulting sauce with the caper sauce for more depth.
To Serve
Arrange a small bed of microgreens or baby arugula on each plate if using. Place 3–4 coated sweetbreads per serving atop the greens.
Serve immediately while the coating is crisp and the sauce warm.
