Marinate the Pork

In a large bowl, combine cubed pork shoulder, Sadie's Red Chile sauce, minced garlic, ground cumin, oregano, salt, and black pepper. Mix well to coat the pork evenly. Cover and refrigerate for at least 2 hours, or preferably overnight.

Preheat the Oven

Preheat your oven to 300°F (150°C).

Sear the Pork

In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the marinated pork and sear on all sides until browned, about 5-7 minutes.

Bake the Carne Adovada

Pour in the water and bring to a simmer. Cover the pot with a lid and transfer it to the preheated oven. Bake for 2.5 to 3 hours, or until the pork is tender and easily shreds with a fork.

Serve

Remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro before serving. Enjoy your Sadie's Carne Adovada with warm tortillas or rice.
