Make the Sopaipilla Dough

In a large bowl, mix together flour, baking powder, and salt. Add warm water and vegetable oil, and knead until a smooth dough forms. Cover and let rest for 30 minutes.

Prepare the Filling

While the dough is resting, cook your choice of filling. For the beef, brown it in a skillet; for chicharrónes, heat until crispy; for grilled patty, cook to your liking; and for shredded chicken, sauté with spices.

Roll and Fill the Sopaipilla

Divide the dough into equal portions, roll each portion into a circle, and place a generous amount of your chosen filling in the center. Fold the dough over and press the edges to seal.

Fry the Sopaipilla

In a deep skillet, heat oil over medium heat. Fry each stuffed sopaipilla until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serve with Sides

Serve the stuffed sopaipillas hot with frijoles and papitas on the side.
