Rim & Prepare Glass
Prep the rim
Pour the coarse sea or smoked salt onto a small plate and mix in the grapefruit zest. Run the grapefruit wedge around the rim of a rocks or coupe glass, then dip the rim into the salt-zest mixture to coat. Set the glass in the freezer for a few minutes to firm the rim (optional).
Mixing the Margarita
Add the blanco tequila (2 oz), fresh red grapefruit juice (1 oz), fresh lime juice (0.75 oz), fermented mangosteen liqueur (0.5 oz), orange liqueur (0.5 oz), and agave syrup (0.5 oz) to a cocktail shaker.
Add grapefruit bitters (2 dashes) if using. Fill the shaker three-quarters full with ice (about 1 cup).
Shake vigorously for 12–18 seconds until the outside of the shaker is well-chilled and slightly frosted. This both chills and dilutes the cocktail to proper balance.
Strain the cocktail through a fine mesh strainer (or Hawthorne strainer) into the prepared glass over fresh ice (use the serving ice). If serving up (no ice), double-strain into the chilled glass without ice.
Garnish & Finish
Garnish with a thin wheel or wedge of red grapefruit, expressing a little over the drink before dropping it in to add aromatic oils. Serve immediately.
