Method

Chill glass
Place a rocks or coupe glass in the freezer or fill with ice water to chill while you build the cocktail.
If using a rocks glass, add the large ice cube. If using a coupe, remove the chilling ice water and proceed without ice in the glass.
Add 2 oz Courvoisier VSOP Cognac, 0.25 oz simple syrup, 0.5 oz fresh lemon juice and 2 dashes Angostura bitters into a cocktail shaker.
Fill the shaker with ice, cap, and shake vigorously for 10–12 seconds until well chilled (if serving up). If serving on the rocks and you prefer less dilution, stir instead for 20–30 seconds in a mixing glass with ice.
If shaken: double-strain into the chilled coupe or rocks glass (without ice). If stirred for on-the-rocks: strain over a large ice cube in the chilled rocks glass.
Express the oils of an orange twist over the drink by holding the twist skin-side down above the cocktail and giving it a gentle squeeze so the oils spray onto the surface. Rub the twist rim around the glass and drop it in as garnish.
Serve immediately.
Optional: Old-Fashioned style
In a rocks glass, place the sugar cube and saturate it with 2 dashes of Angostura bitters and 0.25 oz soda water. Muddle until the cube is mostly dissolved.
Add 2 oz Courvoisier VSOP and a large ice cube. Stir gently to combine and chill for about 20–30 seconds.
Express an orange twist over the drink, rub on the rim, drop in, and serve.
