Preparing the Filling

Step 1

Preheat the oven to 350°F (175°C). In a bowl, combine the seasonal fruit, granulated sugar, lemon juice, cornstarch, and cinnamon. Toss until the fruit is well-coated.

Making the Crumble Topping

In another bowl, mix together the flour, oats, brown sugar, and salt. Melt the butter and add it to the mixture, stirring until crumbly.

Assembling and Baking

Spread the fruit mixture into a baking dish. Sprinkle the crumble topping evenly over the fruit. Bake for 30-35 minutes or until the topping is golden brown.

Making Vanilla Bean Gelato

In a saucepan, combine the milk, cream, and sugar over medium heat. Stir until the sugar dissolves. In a bowl, whisk the egg yolks, then gradually add the warm milk mixture. Return to the saucepan and cook until thickened. Add the vanilla bean. Cool and churn in an ice cream maker according to manufacturer’s instructions.
