Preparation
Preheat and measure
Preheat your mug or carafe by rinsing it with the 2 oz of extra hot water, then discard the rinse. Measure 8 oz (about 237 ml) of filtered water and bring it to brewing temperature, 195–205°F (90–96°C). If you don't have a thermometer, bring water to a simmer and let sit 30 seconds.
Grind beans (if using whole beans)
Weigh or measure 0.044 cups (approximately 8–9 grams; this recipe is intended as a single 8 oz cup) of medium-roast house blend whole beans. Grind to a medium grind (similar to granulated sugar) for drip or pour-over. If using pre-ground medium grind, skip this step.
Brewing (Pour-over / Drip Method)
Set up brewer and filter
Place a filter in your pour-over cone or drip brewer, and rinse it with hot water to remove paper taste and preheat the brewer. Discard the rinse water.
Bloom
Place the measured ground coffee (0.044 cups / ~8–9 g) into the filter. Start a timer and pour just enough hot water (about 30–40 g / ml) to fully saturate the grounds. Let the coffee bloom for 30–45 seconds to release trapped gases.
Continue pouring
After the bloom, pour the remaining hot water in slow, steady concentric circles, keeping the water level consistent and avoiding pouring directly on the sides of the filter. Aim to finish pouring by 2:00–2:30 minutes total brew time. The final brewed coffee yield should be about 8 oz (237 ml).
Alternative: Automatic drip
If using an automatic drip machine, add the ground coffee to the basket, start the brew with 8 oz of water, and allow the machine to complete the brew cycle.
Finishing
Serve
Remove the brewer or filter and pour the brewed coffee into your preheated mug if necessary. Taste and adjust.
Optional additions
If desired, add up to 2 oz milk (warmed or frothed) and 1 tsp simple syrup or sugar, or a pinch (0.125 tsp) of salt to enhance flavor and reduce bitterness. Stir gently and serve immediately.
