Prepare equipment

Select a small saucepan or a tokkuri (ceramic sake server). Make sure it is clean and dry. Choose a heatproof serving cup (ochoko) sized to yield about 10 oz (roughly 300 ml total).

Combine sake and optional water

Pour 1.25 cups (approx. 300 ml) of sake into the saucepan or tokkuri. If you prefer a slightly lower alcohol strength or gentler warming, add up to 0.25 cup (60 ml) water and stir gently to combine.

Add aromatics

Add 2 thin slices of fresh ginger to the sake. If using, add the peel of 1 small piece of yuzu or lemon into the liquid to impart fragrance while warming.

Warm gently

Heat the sake over very low heat. Monitor with a thermometer if available: warm to between 104–113°F (40–45°C) for 'nurukan' (lukewarm) or 122–131°F (50–55°C) for 'atsukan' (hot). Do not let the sake simmer or boil — remove from heat as soon as it reaches the target temperature. This usually takes 3–6 minutes depending on volume and cookware.

Rest and infuse

Turn off the heat and let the sake sit covered for 1–2 minutes so the ginger and peel gently infuse the liquid. Taste one small sip (careful — hot) and adjust infusion time if you prefer stronger ginger/yuzu notes.

Strain and serve

Remove and discard the ginger slices and citrus peel (or leave a thin peel in the tokkuri for presentation if desired). Pour the warmed sake into the serving cup (ochoko) up to about 10 oz total (300 ml).

Garnish (optional)

Finish with a light sprinkle of toasted sesame seeds and a few thinly sliced scallion rings floated on top, or a small twist of yuzu/lemon peel perched on the rim.

Safety and storage

Serve immediately while warm. Do not reheat more than once. Any leftover warmed sake should be cooled, refrigerated, and consumed within 24 hours; reheat gently if desired following the same warming guidance.
