Prepare glass

Place 4 cubes of ice into a short rocks glass (or coupe if serving up) to chill while you build the cocktail.

Dry shake (if using egg white)

If using egg white for texture, add 0.5 oz egg white, 2 oz Jägermeister, 1 oz cold brewed black coffee, 0.5 oz fresh lemon juice and 0.25 oz simple syrup into a cocktail shaker WITHOUT ice. Secure the lid and shake vigorously for 12–15 seconds to emulsify and create foam.

Wet shake

Add 6 ice cubes to the shaker. Seal and shake hard for 12–15 seconds until the exterior of the shaker is frosty and well-chilled.

Strain and serve

Discard the ice from the chilled serving glass. Double-strain the cocktail into the glass over fresh ice (or fine-strain into the chilled coupe without ice if preferred).

Garnish

Express a lemon twist over the drink to release oils, rub the rim with the twist if desired, then drop it into the glass. Optionally, finish with a light dusting of freshly ground black pepper on the foam or surface for an herbal-spicy contrast.

Notes

Taste and adjust: if the cocktail is too bitter, add an additional 0.25 oz simple syrup; if too sweet, add 0.25 oz more lemon juice. Cold brewed coffee gives a smoother coffee note; substitute a strong espresso (0.5 oz) if preferred and reduce coffee volume accordingly.
