Muddle

Place 8 fresh blackberries and 6 of the mint leaves into a sturdy cocktail shaker or mixing glass. Add the simple syrup (0.75 oz) and lemon juice (0.75 oz). Using a muddler or the back of a wooden spoon, gently muddle the blackberries and mint 8–10 times until the berries are broken down and the mint releases aroma but not shredded into tiny pieces. Goal: release juices and oils without pulverizing the mint.

Add spirit and ice

Add the bourbon (2 oz) to the muddled fruit and mint. Fill the shaker about halfway with crushed ice (or regular ice if crushed not available) — roughly 1 cup — then securely cap the shaker.

Shake or stir

If using a cocktail shaker, shake vigorously for 10–12 seconds to chill and slightly dilute. If using a mixing glass, stir briskly for 20–30 seconds, then strain through a fine mesh strainer to remove seeds and large solids while pouring into the glass.

Prepare glass

Fill a rocks glass or short tumbler with crushed ice to the top. If you strained in the previous step, double-strain into the prepared glass to keep seeds out.

Combine and finish

Pour the shaken strained mixture over the crushed ice. Top with club soda (about 1 oz) to add effervescence and lift the flavors. Gently stir once with a bar spoon 1–2 times to integrate soda without flattening it.

Garnish

Thread 1 fresh blackberry onto a pick or drop it into the glass and tuck a mint sprig (use the remaining 2 mint leaves' aroma) into the rim. Clap the mint between your palms once and place it on top to release aroma. Serve immediately.
