Prepare glass

Chill a coupe or martini glass by filling it with ice and cold water; set aside while you mix the drink.

Dry shake (if using egg white)

In a cocktail shaker add gin, blue curaçao, lemon juice, simple syrup, maraschino liqueur and egg white (if using). Seal and vigorously dry-shake (no ice) for 20–30 seconds to emulsify and build a silky foam.

Wet shake

Add the ice to the shaker (about 1 cup). Seal and shake vigorously for 10–15 seconds until well chilled and the shaker is frosty.

Strain

Dump the ice and water from the chilled glass. Double-strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any large foam bubbles.

Optional finish

If you prefer a lighter, slightly effervescent Blue Moon Light, gently float 1 oz club soda on top by pouring over the back of a bar spoon.

Garnish

Express the lemon twist over the drink to release oils, then rub the rim with the twist and drop it into the cocktail as garnish.

Serve immediately while cold. Note: If not using egg white, skip the dry shake and perform a single vigorous wet shake for 15 seconds to sufficiently chill and dilute the cocktail.
