Chill a copper mug or highball glass in the freezer for 5–10 minutes if desired.
Pour 2 oz Absolut vodka over the ice.
Add 1 oz peach liqueur (or peach schnapps) to the glass for a pronounced peach note. If you prefer a subtler peach flavor, reduce to 0.5 oz.
Squeeze 0.5 oz (about half a lime) of fresh lime juice into the glass to add brightness and balance the sweetness.
Top with 4 oz chilled ginger beer. Pour slowly to retain carbonation and gently stir once with a bar spoon or long spoon to combine (1–2 gentle stirs).
Garnish
Garnish with a lime wheel or wedge on the rim and, if desired, a sprig of fresh mint and/or a thin peach slice tucked into the ice.
Serve immediately with a straw or short stirrer and advise guests to give it a quick stir before sipping.
