Prepare chives and garlic

Rinse the chives under cold water and pat dry with a clean towel. Use a sharp knife to finely mince the chives until you have about 3 tablespoons packed. Peel and finely mince the garlic clove (or grate it on a microplane) so it integrates smoothly into the yogurt.

Combine base ingredients

In a medium mixing bowl, add 2 cups of plain whole-milk yogurt. Stir in 1 tablespoon fresh lemon juice and 1 teaspoon extra-virgin olive oil until evenly mixed. The oil adds silkiness while the lemon brightens flavor.

Add aromatics and season

Fold the minced chives and the minced garlic into the yogurt mixture. Add 1 teaspoon coarse sea salt and 1 teaspoon freshly ground black pepper. If you prefer a touch of sweetness to balance acidity, add 1 teaspoon honey or sugar and mix thoroughly.

Adjust texture and taste

If the yogurt is thicker than you like for a sauce or dressing, stir in up to 1 teaspoon cold water at a time until it reaches your desired consistency (do not exceed 1–2 teaspoons for a slightly thinner texture). Taste and adjust seasoning: add more salt, lemon, or pepper as needed.

Chill for melding flavors

Cover the bowl with plastic wrap or transfer the chive yogurt to an airtight container. Refrigerate for at least 30 minutes (preferably 1–2 hours) to allow the garlic and chives to infuse the yogurt and mellow the lemon. This step improves depth of flavor but can be skipped in a pinch.

Serve

Stir the chilled yogurt once before serving. Drizzle a little extra-virgin olive oil on top and sprinkle a few reserved finely chopped chives for garnish, if desired. Serve as a dip for vegetables, a sauce for grilled meats or fish, a spread for sandwiches, or dolloped on baked potatoes.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Stir before using. Discard if the yogurt develops off smells or mold.
