Muddle Mint
Place 8 fresh mint leaves in the bottom of a cocktail shaker. Add the mango puree and the optional simple syrup (0.25 oz) if your mango puree isn't very sweet. Gently muddle the mint with the puree and syrup using a muddler or the back of a spoon — press to release aromatic oils but avoid shredding the leaves into tiny bits.
Add Liquids
Add 2 oz Mr. Pickles Gin, 0.75 oz fresh lime juice, and 1 oz pineapple juice to the shaker with the muddled mint and mango.
Shake
Fill the shaker with about 1 cup of ice. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and well-chilled.
Prepare Glass
Fill a highball or Collins glass with crushed ice (about 1 cup).
Double Strain & Serve
Double-strain the shaken cocktail into the prepared glass over the crushed ice to remove mint bits and any pulp (use a Hawthorne strainer plus a fine mesh strainer if available).
Garnish
Gently slap a mint sprig between your hands to awaken the oils and place it on top of the drink. Add a lime wheel or wedge on the rim. Optionally thread a small slice of fresh mango on a pick and rest on the rim.
Final Notes
Taste and adjust sweetness or acidity if needed — add 0.25 oz more simple syrup for more sweetness or 0.25 oz more lime juice for brighter acidity. Serve immediately.
