Cheesecake Preparation

Make the Crust

Preheat the oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Prepare the Cheesecake Filling

In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs, one at a time, mixing until just combined. Pour the filling over the cooled crust.

Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove and let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Make the Icing

In a medium bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy and spreadable.

Once the cheesecake is fully chilled, spread the cream cheese icing evenly over the top. Sprinkle birthday cake bits and rainbow sprinkles on top before slicing and serving.
