Cook Quinoa

Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare Vegetables

Chop the red bell pepper, zucchini, and carrot into small cubes. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until they are tender.

Cook Tofu

While the vegetables are cooking, press the tofu to remove excess moisture. Cut it into small cubes. Add the tofu to the skillet with the vegetables and cook for another 5 minutes until golden brown.

Combining Ingredients

Add Chickpeas and Spices

Drain and rinse the canned chickpeas. Add them to the skillet along with 1 teaspoon of garlic powder, 1 teaspoon of cumin, 1 teaspoon of paprika, salt, and black pepper to taste. Stir well and let it cook for another 5 minutes.

Incorporate Spinach and Quinoa

Add the fresh spinach and cooked quinoa to the skillet. Stir everything together and cook for an additional 3-4 minutes until the spinach is wilted.

Serving

Garnish and Serve

Remove the skillet from heat. Drizzle 1 tablespoon of lemon juice over the mixture and sprinkle with chopped fresh parsley. Serve warm and enjoy your Mighty dish!
