Bao Buns
Method
Preparation
Make the Bao Buns
In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. In a large mixing bowl, combine flour, milk, baking powder, and salt. Add the yeast mixture and knead for about 10 minutes until a smooth dough forms. Cover and let it rise for 1 hour until doubled in size.
Shape the Buns
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and flatten into discs. Place on parchment paper and let them rise for another 30 minutes.
Steam the Buns
Prepare a steamer and steam the buns for about 10-12 minutes until fluffy and cooked through. Keep warm.
Prepare the Gochujang Aioli
In a bowl, mix together the gochujang and mayonnaise until well combined.
Assemble the Bao Buns
Take a steamed bun, add a generous portion of shredded chicken, drizzle with gochujang aioli, and top with pickled red onion and fresh cilantro. Sprinkle sesame seeds on top before serving.
