Build and shake

Add 60 ml Old Monk dark rum, 22 ml fresh lime juice, 12 ml simple syrup, 7.5 ml orange liqueur (if using), and 2 dashes Angostura bitters into a shaker or mixing glass filled with ice.

Mix

Shake vigorously for 10–12 seconds (for a slightly frothy, well-chilled drink) or stir for 20–30 seconds if you prefer less dilution and a silkier texture.

Prepare glass

Place one large ice cube or several ice cubes into a chilled rocks (old-fashioned) glass.

Strain

Strain the cocktail over the ice in the rocks glass using a Hawthorne or fine strainer to remove small ice shards and pulp.

Garnish & Finish

Express orange oils

Take an orange peel and hold it about 3–4 inches above the drink. With the peel facing down, give it a quick squeeze to express oils over the surface, then run the peel around the glass rim and drop it into the drink.

Optional lime garnish

If desired, garnish with a lime wheel or wedge on the rim for visual contrast and an optional bright aroma.

Serve immediately and enjoy. Adjust sweetness by increasing or decreasing simple syrup to taste.
