Prepare the Hard Boiled Eggs

Place the eggs in a pot and cover them with water. Bring to a boil and then turn off the heat. Let the eggs sit in the hot water for 10-12 minutes. Transfer them to an ice bath to cool before peeling.

Make the Deviled Egg Sauce

In a bowl, mash the yolks of the hard boiled eggs. Add mayonnaise, Dijon mustard, capers, lemon juice, salt, and black pepper to taste. Mix until smooth and well combined.

Assemble the Boquerones Huevos

Slice the hard boiled eggs in half lengthwise and remove the yolks. Fill the egg whites with the deviled egg sauce. Top each with a piece of white anchovy and sprinkle with chopped fresh parsley.

Serve

Arrange the stuffed egg halves on a platter and serve immediately as an appetizer or snack.
