Prepare mushrooms

Brush or wipe mushrooms clean and slice thinly so they cook evenly. Measure about 4 cups loosely packed sliced mushrooms.

Sauté aromatics

Heat a large sauté pan over medium-high heat. Add olive oil and 1 tbs butter. When hot, add the finely minced shallot and sauté 1–2 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant; do not brown.

Cook mushrooms

Add the sliced mushrooms in a single layer if possible. Let them sit undisturbed 1–2 minutes to develop color, then stir occasionally for 6–8 minutes until they release their liquid and most of it evaporates and mushrooms are lightly browned.

Deglaze and season

Pour in the white wine (if using) and scrape up any browned bits; cook 1–2 minutes until alcohol smell dissipates. Stir in light soy sauce, chopped thyme, salt, and black pepper. Reduce heat to medium-low.

Finish with truffle and cream

Stir in the heavy cream (or crème fraîche) and add grated fresh black truffle or truffle paste. Mix to combine and cook 1 minute more until the mixture is cohesive but not watery. Taste and adjust seasoning. Remove from heat and fold in chopped chives. Let the filling cool to lukewarm (15–20 minutes) — warm filling will make the wrappers soggy.

Wrapper & Assembly

Prepare work station

Set out spring roll wrappers on a lightly dusted surface. If using rice paper, have a shallow dish of warm water ready. Keep egg wash or cornstarch slurry nearby to seal edges.

Portion filling

Spoon about 2 to 3 tablespoons of the cooled mushroom-truffle filling onto the lower third of each wrapper (adjust quantity to wrapper size). Do not overfill; filling should be slightly under the center to allow folding.

Fold rolls

Fold the bottom edge over the filling, press gently to compact. Fold the left and right sides inward snugly, then roll up tightly to the top, sealing the final edge with a little egg wash or cornstarch slurry. Repeat until all wrappers are filled. Expect about 12 rolls.

Chill briefly (optional)

Place assembled rolls on a baking sheet and refrigerate for 15 minutes to firm up the pastry and reduce oil absorption during frying.

Frying / Finishing

Heat oil

Pour oil into a heavy skillet to a depth of about 1/4 inch (or use a deep skillet). Heat over medium heat to 350°F (175°C) if using a thermometer. If you don't have one, test by dropping a small piece of wrapper — it should sizzle and bubble steadily without browning instantly.

Fry spring rolls

Add rolls seam-side down to the hot oil in a single layer (do not overcrowd). Fry 2–3 minutes per side, turning to brown evenly, until golden and crisp. Use tongs to turn gently. Adjust heat as needed to avoid burning — medium to medium-high is typical.

Finish and drain

If using, add 1 tbs butter to the pan in the last 30 seconds and spoon melted butter over the rolls for a glossy finish. Transfer cooked rolls to a wire rack or paper towel-lined tray and sprinkle lightly with sea salt flakes while still hot.

Garnish & Serving

Arrange microgreens or baby arugula on a platter. Place spring rolls on top, garnish with a few thin slices or shavings of fresh black truffle if available, and serve immediately with lemon wedges and the soy-truffle dipping sauce alongside.

To make the dipping sauce: combine 3 tbs light soy sauce, 1 tsp truffle oil (or 1/2 tsp truffle paste diluted), 1 tsp rice vinegar, and 1 tsp honey. Taste and adjust balance; serve in a small bowl for dipping.
