Preparation
Prepare the Sauce
In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in ground cumin, chili powder, and salt. Add enchilada sauce and bring to a simmer. Cook for 5 minutes, stirring occasionally.
Prepare the Filling
In a mixing bowl, combine shredded cheese and refried beans. Mix well until fully combined.
Assembly
Fill the Tortillas
Preheat your oven to 350°F (175°C). Take a corn tortilla and place about 2 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.
Add Sauce
Once all enchiladas are in the baking dish, pour the enchilada sauce evenly over the top of the tortillas, ensuring they are well coated.

Remove the enchiladas from the oven and let them cool for a few minutes. Serve hot, topped with sour cream, chopped cilantro, and sliced jalapeños.
