Prepare Ingredients
Gather all ingredients: flour tortillas, shredded cheddar and Monterey Jack cheese, and any optional ingredients you wish to add.
Cooking
Heat the Pan
Place a non-stick skillet over medium heat and allow it to warm up for about 2 minutes.
Assemble the Quesadilla
On a clean surface, lay one flour tortilla flat. Evenly sprinkle half of the cheddar and Monterey Jack cheese on one half of the tortilla. If using, add sliced jalapeños and chopped cilantro on top of the cheese.
Fold the Quesadilla
Fold the tortilla over to cover the cheese and create a semi-circle shape.
Grill the Quesadilla
Carefully place the folded quesadilla in the heated skillet. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt.
Flip the Quesadilla
Using a spatula, gently flip the quesadilla over and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
Remove and Slice
Once cooked, transfer the quesadilla to a cutting board. Allow it to cool for a minute, then cut into wedges.
Serving
Serve
Serve the quesadilla warm with sour cream and salsa on the side for dipping.
