Prepare the Ingredients

Finely chop the onion, garlic, and jalapeño pepper. Remove the casing from the chorizo sausage.

Grate the Cheese

Grate the Chihuahua and Monterey Jack cheese and set aside.

Cooking

Cook the Chorizo

In a skillet, heat the olive oil over medium heat. Add the chorizo and cook for about 5-7 minutes, breaking it up with a spatula until fully cooked and browned.

Sauté the Vegetables

Add the chopped onion, garlic, and jalapeño to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.

Combine Cheese and Chorizo

Reduce the heat to low. Add the grated Chihuahua and Monterey Jack cheese to the skillet, stirring continuously until the cheese is melted and bubbly.

Serving

Garnish and Serve

Remove from heat. Stir in fresh cilantro and spoon the queso fundido into a serving bowl. Serve hot with tortilla chips on the side and a dollop of sour cream.
