Prep the Ingredients

Dice the cherry peppers and onion into small pieces. Grate the Monterey Jack cheese if not pre-grated.

Cook the Quesadillas

Heat a large skillet over medium heat. Place one tortilla in the skillet and sprinkle a generous amount of Monterey Jack cheese on one half of the tortilla. Add a layer of diced cherry peppers and onions on top of the cheese. Fold the other half of the tortilla over the filling.

Grill the Quesadilla

Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side until golden and the cheese is fully melted.

Repeat

Remove the cooked quesadilla from the skillet and keep warm. Repeat the process with the remaining tortillas and filling ingredients.

Cut the quesadillas into wedges and serve hot with a side of guacamole, sour cream, and pico de gallo.
