Pain au Chocolat (mini)

Make enriched dough

In a bowl, whisk together 1.5 cups flour, 1 tsp instant yeast, 1 tbsp sugar and 0.5 tsp salt. Warm 0.5 cup milk until lukewarm (95–105°F / 35–40°C), stir in 2 tbsp water and pour into dry ingredients. Add 2 tbsp room-temperature butter. Mix/knead until a smooth, slightly sticky dough forms (about 6–8 minutes by mixer or 8–10 by hand). Shape into a disk, cover and rest 30 minutes at room temperature.

Prepare butter block

While dough rests, place 4 oz cold unsalted butter between parchment and pound/roll into a 5x5 inch square about 1/4-inch thick. Chill until same firmness as dough but still pliable (about 15 minutes).

Laminate (single-turn method for mini size)

On a lightly floured surface, roll dough into a 7x5 inch rectangle. Place butter block centered on dough, fold dough over like an envelope to encase butter. Seal edges. Roll gently to a 11x7 inch rectangle, then fold into three (letter fold). Rotate 90°, roll again to 11x7 and fold into three. Chill 20–30 minutes between folds if butter softens. For mini pastries, two turns is sufficient.

Shape mini pains

Roll laminated dough to a 12x8 inch sheet about 1/8-inch thick. Trim edges and cut into 8 rectangles roughly 3x2 inches. Place a chocolate baton or 1 tsp chopped chocolate near one short edge of each rectangle, roll tightly toward the opposite edge to form a small cylinder seam-side down. Place on parchment-lined tray, about 1 inch apart.

Proof & egg wash

Cover trays loosely with plastic and proof at warm place (75–80°F / 24–27°C) until puffy, about 45–60 minutes. Whisk 1 egg with 1 tsp cold water and brush lightly.

Bake

Preheat oven to 400°F (200°C). Bake mini pains 12–15 minutes until deep golden and flaky. Rotate tray once halfway.

Cool

Transfer to wire rack and cool 10 minutes before serving so chocolate sets.

Pain Suisse (mini)

Assemble using laminated dough

Use reserved/enriched laminated dough from pain au chocolat section. Roll to 12x8 inch sheet. Spread 2 tablespoons thick pastry cream in a 1-inch wide strip down center of each 3x2 inch rectangle and sprinkle 1 tbsp chopped dark chocolate over cream. Fold one side over so chocolate is enclosed (or leave slightly open). Place on parchment-lined tray.

Proof & egg wash

Proof at warm place 45–60 minutes until puffy. Whisk 1 egg for wash with 1 tsp water and brush the tops.

Bake

Bake at 400°F (200°C) for 12–15 minutes until golden. Let cool 10 minutes.

Cheese Danish (mini)

Make cream cheese filling

Beat 8 oz room-temperature cream cheese with 3 tbsp powdered sugar, 1 tsp vanilla extract and 1/2 tsp lemon zest until smooth and fluffy. Transfer to a piping bag or bowl.

Prepare puff pastry squares

Preheat oven to 400°F (200°C). On a floured surface, cut thawed puff pastry sheets into 3x3 inch squares (yield: about 16 mini squares from 8 sheets depending on size). Place squares on parchment-lined trays. Score a 1/4-inch border around each square (don’t cut through).

Fill, egg wash & bake

Pipe or spoon ~1 tbsp cream cheese filling into center of each square. Fold corners slightly toward center or leave as open-faced. Whisk 1 egg with 1 tsp milk and brush edges. Bake 12–15 minutes until edges are puffed and golden.

Finish

Cool 5–10 minutes. Dust with powdered sugar or pipe a thin glaze (mix 1/4 cup powdered sugar + 1 tsp milk to desired consistency) if desired.

Fruit Danish (mini)

Prepare pastry bases

Using remaining puff pastry sheets, cut 3x3 inch squares and score a 1/4-inch border on each square. Place on parchment-lined trays.

Fill & egg wash

Place approximately 1 tsp jam in the center of each square. Top jam with a few fresh berries or a thin slice of stone fruit (2–3 pieces). Whisk 1 egg with 1 tsp milk and brush the pastry border.

Bake

Bake at 400°F (200°C) 12–15 minutes until puffed and golden. Watch that fruit doesn’t burn; tent with foil if browning too quickly.

Finish

Cool briefly and dust with 1 tbsp powdered sugar or glaze (optional) before serving.

Oat Coconut Bars

Make oat base

Preheat oven to 350°F (175°C). In a bowl mix 2 cups rolled oats, 0.5 cup flour, 0.5 cup packed brown sugar, 0.75 cup shredded coconut, 0.5 tsp baking powder and 0.25 tsp salt.

Bind & bake

Stir in 6 tbsp melted butter, 3 tbsp maple syrup and 1 tsp vanilla until mixture holds together. Press two-thirds of the mixture firmly into an 8x8 inch parchment-lined baking pan to form the crust. Reserve remaining mixture for topping. Bake crust 10 minutes.

Add topping & finish

Remove from oven, sprinkle any optional add-ins (nuts or chocolate) if desired, then sprinkle reserved oat mixture evenly on top. Bake another 12–15 minutes until golden. Cool completely in pan, then chill 30 minutes and cut into mini bars (about 16).

Pumpkin Seed Power Bites

Combine ingredients

Toast 0.5 cup pumpkin seeds in a dry pan over medium heat 3–4 minutes until fragrant; cool. In a bowl combine 1 cup oats, toasted pepitas, 0.5 cup almond butter, 3 tbsp honey, 2 tbsp ground flaxseed, 1 tbsp chia seeds, 0.5 tsp vanilla and 0.25 tsp salt. Mix until a sticky dough forms; fold in 2 tbsp chocolate chips if using.

Form bites & chill

Scoop 1 to 1.5 tbsp portions and roll into compact balls with slightly damp hands (yields ~12–16 bites). Place on parchment-lined tray, chill at least 30 minutes to set. Store refrigerated up to 1 week or freeze for longer storage.

Finishing & Serving

Arrange mini pain au chocolat, pain suisse, cheese danish, fruit danish, oat coconut bars and pumpkin seed power bites on a platter. Serve slightly warm for laminated and puff pastries (reheat 3–4 minutes at 300°F if needed) and chilled for power bites and bars. Label items and keep pastries in a cool, dry place; cover loosely to preserve flakiness.
