Preparation of Ingredients

Prepare the Pork and Beef

In a large mixing bowl, combine the ground pork and ground beef. Mix thoroughly until evenly combined.

Prepare the Spices

In a separate small bowl, mix together salt, black pepper, garlic powder, paprika, red pepper flakes, fennel seeds, dried thyme, and sugar.

Soak the Casings

Soak the pork casings in cold water for at least 30 minutes to soften them. Rinse the casings thoroughly under cold water, inside and out.

Combine Ingredients

Add the spice mixture to the ground meat mixture, followed by the ice water. Mix thoroughly using your hands until the mixture is sticky and well combined.

Stuff the Casings

Using a sausage stuffer, carefully fill the casings with the meat mixture. Be sure not to overstuff, and twist sausages into 6-inch links as you go.

Tie Off the Casings

Tie the ends of the casings securely with kitchen twine, ensuring there are no air pockets.

Cook the Sausages

Preheat a grill or skillet over medium heat. Cook the sausages for about 15-20 minutes, turning occasionally, until they are browned and cooked through.

Remove the sausages from the grill or skillet and let them rest for a few minutes before slicing or serving whole.
